It is one of the few materials that shows up inside other records: of the 23,941 materials with a solubility field, 1,977 mention ethyl acetate in it, putting it fourth behind water, alcohol and propylene glycol. The same paper sniffed out 71 odours by GC-O: 18 marked defects and only 6 marked quality.

Two things to read together.
First, ethyl acetate is fourth, ahead of every diluent a perfumer typically reaches for. Its role in this data is closer to a working solvent for labs and factories than to a diluent in a formula.
Second, DPG has only 222. That is counterintuitive for anyone used to perfumery, where DPG is the standard diluent. The reason is in the source data's character: this catalogue leans towards flavour, and the solubility field records the chemical fact of what a material dissolves in, not the working habit of what a perfumer dilutes with. DPG versus IPM compares the latter. The two lists are not asking the same question.
Vapour pressure 111.7, longevity 4 hours

Anyone working at home should take this section seriously. It is not at the "be careful" level. It is at the ventilate, keep away from ignition sources, do not light a candle on the same table level.
How yeast makes it
In 2023 Yoshimoto and Bogaki at Kirin Holdings published a review of acetate esters in the Journal of Bioscience and Bioengineering (PMID 37607842).
The mechanism, copied out: acetate esters such as isoamyl acetate and ethyl acetate are major aroma components of alcoholic beverages. They are produced by synthesis from acetyl-CoA and the corresponding alcohol by alcohol acetyltransferase (AATase) with specific control of reaction factors including unsaturated fatty acids and precursors, the percentage of nitrogen, and oxygen.
Then an honest sentence: the mechanisms by which these specific reaction factors affect acetate ester production remain largely unknown.
So the fruity layer you meet in beer, sake and fruit wines is yeast joining an acetyl group to an alcohol. Ethyl acetate is the simplest product on that route, because ethanol is the starting material itself.
In Calvados, it is the denominator of quality
In 2003 Guichard and colleagues in France analysed eight freshly distilled Calvados, the apple brandy of Normandy, by sensory evaluation and direct injection GC (PMID 12517106).
The finding is neat: esters have a probable maximum level around 500 g per hectolitre of pure alcohol, and this level also corresponds to the threshold of the main ester constituent, ethyl acetate. Then the key sentence: a high ratio of esters to ethyl acetate seems to be of prime importance for good quality.
Ethyl acetate, in other words, is not what you add for credit. It is the denominator. For the same total esters, the smaller its share the better. The moment it crosses its own threshold, the smell moves from fruit to nail polish remover.
They then extracted with pentane and ran gas chromatography with an olfactometry port (GC-O), detecting 71 odours. Nineteen were common to all samples and formed the "skeleton" of the aroma. Twenty-eight were specific to a quality class: 6 for good quality, 4 for neutral and 18 for defective. The remaining 24 had either too low an impact or no evident specificity.
That 6 against 18 is worth remembering. In this set, odours marking a fault outnumbered odours marking quality three to one. The discriminant for quality leans on deductions, not additions.
Buying and storing
105 suppliers, and it is an industrial commodity, so price and availability are not the problem. Other things are:
- Decide the grade before buying. The database's formulations field lists commercial 85–88%, 95–98%, 99%, NF (national formulary) grade at 99% and FCC food grade. Industrial grade is fine for rinsing glassware; anything going into a formula wants food grade or better.
- Storage is governed by the flash point, not the shelf life. Cool, away from ignition sources and static, containers grounded. It is the same class of risk as the alcohol piece, only lower.
- Dry the glassware completely after rinsing. Four hours of longevity means residue does not vanish immediately, and it will lift the opening of whatever you build next.
- Boiling point 76.5–77.5 °C, below water. Think that through before any heated operation.
- Water solubility 80,000 mg/L is an experimental value, not an estimate, which is unusual in a database full of estimated numbers for naturals.

What this article does not establish
- The 1,977 figure comes from string matching. The solubility field is free text, and I counted whether the words "ethyl acetate" appear in it, not whether anyone ran a solubility experiment.
- I attribute DPG's 222 to the source data's character, with no evidence about the cataloguer's selection criteria.
- The Calvados 500 g/hl comes from those eight samples, not from an industry standard, and eight is the whole sample.
- 6 against 18 is that set's distribution, not a general rule that fault odours outnumber quality odours.
- The flash point and vapour pressure rankings cover only materials that filled those fields (1,171 and 9,020), not all 42,225 records.
