Material guide: maltol — the sweet air of cotton candy, and the two layers of the "sweetness enhancer" legend

CAS 118-71-8, the body of the cotton-candy and caramel smell, and a standard material in the gourmand family. That odors can enhance perceived sweetness has growing empirical support; yet in the classic experiment, maltol ranked lowest of six sweet odorants, and at subthreshold concentration in the model sucrose solution showed no significant effect. 107 suppliers, 372-hour substantivity (measured at 20% in benzyl alcohol), a crystalline material evaluated at 5% or less.
The air beside a cotton-candy machine, sweet enough to glow — that is maltol. Sugar breaking down under heat produces it, which is why caramel, baked bread and cookie edges all carry this molecule; that step is caramel chemistry common knowledge. What matters
- Maltol gives cotton candy and caramel much of their sweet-smelling body and is standard in gourmand perfumery. High strength, evaluate at 5% or less, the first material in this series marked down to 5%.
- Its 372 hours of substantivity carry "sweet" all the way to the end, though that figure was measured on a 20% dilution in benzyl alcohol, so it does not compare directly with other materials' neat numbers.
- It is often called a "sweetness enhancer". The legend has two layers: the phenomenon of odors enhancing perceived sweetness has growing evidence behind it, yet in the classic experiment maltol happened to rank last of the six sweet odorants tested.

Plain reading: CAS is the material's ID number. Two numbers here need footnotes: the evaluation advice is 5% or less (stricter than the usual 10%), and the substantivity row describes a 20% dilution — the source data even names the solvent, benzyl alcohol. Like coumarin, it is a crystal at room temperature; in practice you make a dilution first.
The two layers of the "sweetness enhancer" legend
Maltol wears the "sweetness enhancer" title in both food and fragrance circles. The literature splits that legend in two.
The first layer is the phenomenon itself. Zhang and colleagues open their 2023 review in Comprehensive Reviews in Food Science and Food Safety with it:
There is growing empirical evidence that odor can enhance the perception of sweetness without increasing the caloric load. This review summarizes recent research on odor-induced sweetness enhancement and discusses the mechanisms and influencing factors of odor-sweetness interactions […] odor-induced sweetness enhancement may present an alternative or complementary approach for developing foods with less sugar.
That smells can make things taste sweeter is a genuinely documented research field, and the literature treats it as a possible route for sugar-reduced foods.
The second layer is maltol's own report card. In 2007, Labbe and colleagues ran the classic experiment in Chemical Senses: six sweetness-linked odorants tested at suprathreshold concentration in sucrose solution, then two carried into the subthreshold round (too dilute to consciously smell):
Of the six odorants tested at suprathreshold levels, ethyl butyrate and maltol were selected as they had the highest and the lowest sweetness-enhancing properties, respectively. […] At a subthreshold level, ethyl butyrate but not maltol significantly enhanced the sweetness of the sucrose solution.
In that model-solution setting, the star of "sweet enhancement" was pineapple-smelling ethyl butyrate (a neighbour from the isoamyl acetate guide's family table), and maltol came last. The scope matters: this is about sucrose solutions and taste-level enhancement. It does not say maltol fails to smell sweet.
For a perfumer this is actually liberating. Sweetness in perfume never goes through taste; it is a learned olfactory association — your nose bound "caramel smell" to "sweet" long ago. The maltol in your formula needs no taste mechanism to vouch for it. It smells sweet, and that is its job.
Smelling it
- Evaluate at 5% or less, per the database. My first dilution was 10%, and the strip stayed caramel for a solid week; I have made 2% ever since.
- It is the primer coat of sweetness: a trace under fruity or floral notes rounds the whole thing and makes it friendly; a heavy dose is cotton candy to the face.
- With vanillin and the fruit esters from the isoamyl acetate guide you have the gourmand opening kit; add cinnamaldehyde and the cinnamon roll is complete.
- Residue at the 372-hour tier: when you revise a formula, remember it is still on the strip.

A tiny family; these two are the whole main cast. The ethyl version's "stronger, sweeter" reputation circulates widely with wildly varying multipliers, and we vouch for none of the numbers. Buy a small bottle of each and let your own nose rule.

Listed on GRAS, JECFA, CoE, FEMA GRAS, IFRA. As always, registers carry no limit values. The maltols are regulatorily uncomplicated; for skin formulae, consult the current IFRA Standards and the supplier's specification.
Buying it
- Buy crystals and make your own dilution. 5% is the evaluation strength; working solutions often go thinner still.
- One small bottle each of maltol and ethyl maltol, smelled side by side before you pick a workhorse. Most people end up keeping both.
- High strength plus ultra-long residue: a 10 g pack lasts a very long time.
