Material guide: heliotropin — the flower in its name doesn't contain it, and neither does the vanilla legend

CAS 120-57-0, a cherry-almond-powdery sweetness named after the heliotrope flower. A 2007 study went looking for it in the flower and found none; the bloom's scent is mainly anisaldehyde and benzaldehyde. The legend pinning it to Tahitian vanilla was also settled by quantitation: under one part per million in authentic beans. 74 suppliers, 212-hour substantivity, and the third lesson in names parting ways with facts.
This material is named after the heliotrope, a small purple flower that smells of cherry pie. The name was given with full confidence, and the fact-check arrived more than a century later: researchers took instruments to the flower to look for heliotropin, and found none.
What matters
- Heliotropin is a cherry, almond and powder sweetness, vanillin's powdery cousin and the backbone of heliotrope and mimosa accords. Medium strength, 212 hours, a crystalline material.
- The flower in its name doesn't contain it: a 2007 headspace analysis found no heliotropin in the heliotrope's scent, whose main constituents are anisaldehyde and benzaldehyde. Another lesson in names parting ways with facts, after the C-14 lactone.
- The Tahitian vanilla legend got a quantitative audit too: under one part per million in authentic beans, and the 2013 key-odorant analysis handed the lead roles back to vanillin and anisaldehyde.

Plain reading: CAS is the material's ID number. Like coumarin and maltol it is a crystal at room temperature, so you make a dilution first. The 212 hours and the "custard" and "powdery" descriptors place its work in the sweet-powdery middle and base.
They went to the flower and found none
In 2007, Joulain and colleagues published a serious audit in Natural Product Communications, question mark in the title: "Heliotropin, Heliotrope Odor and Tahitian Vanilla Flavor: The End of a Saga?"
Using dynamic headspace SBSE sampling, thermal desorption and GC-MS analysis, heliotropin is not detected in the fragrance emitted by heliotrope; the main constituents are anisaldehyde and benzaldehyde, confirming previous findings. […] We suggest that heliotropin was named after the discovery of piperonal by degradation of piperine, the odor of which was reminiscent of the heliotrope flower.
On their reading, the naming logic was "smells like that flower" rather than "isolated from that flower". Over a century, the name hardened into a pseudo-fact. This lesson belongs to the same series as aldehyde C-14 being a lactone: catalogue names are historical sediment, and only the CAS settles accounts.

The vanilla legend, audited by the gram
The harder half concerns vanilla. Heliotropin was long described as a characteristic constituent of Tahitian vanilla, and the same study simply weighed it:
Quantifying by GC-MS and LC-MS/MS, less than one part per million of heliotropin is detected in authentic Tahitian vanilla bean. […] Its earlier identification in vanilla extracts was the result of either a wrong interpretation of analytical data or, much more probably, adulterations of these extracts. As a result, heliotropin should not be cited any longer as a characteristic constituent of Tahitian vanilla.
So what does Tahitian vanilla actually smell of? Takahashi and colleagues answered in 2013 with an aroma extract dilution analysis:
Vanillin and anisaldehyde are the most characteristic odor-active compounds in Tahitian vanilla beans, followed by anisyl alcohol and anisyl acetate. […] The study identified 3-methylnonane-2,4-dione for the first time in vanilla beans, and detected β-damascenone and phenylacetic acid as novel compounds in this variety.
The β-damascenone on that list is an old friend; the trace heavyweight turns up even in vanilla beans. And the adulteration remark deserves a pause: vanilla is expensive, the incentive to cut it with a cheap crystal never went away, and the specification-reading habit from the batch variation article is worth real money here.
Smelling it
- Medium strength; 10% is a comfortable evaluation. Alone it is cherry candy wearing an almond-powder coat, with a vanilla tail.
- The perfumery "heliotrope accord" is nowadays built around this crystal: heliotropin plus vanillin plus a touch of anisaldehyde, a powdery retro floral. Whether botany agrees is a separate matter — the formula language has become its own system, trade common knowledge.
- Bedded with vanillin and a musk it gives the baby-powder direction; my first attempt at that accord started from exactly these three.
- Its almond-cherry face neighbours benzaldehyde; smell the two side by side to separate "marzipan" from "almond powder".

Regulatory and a purchasing note
Listed on GRAS, JECFA, CoE, FEMA GRAS, IFRA; as always, registers carry no limit values. One practical extra: heliotropin (piperonal) is a monitored chemical precursor in most jurisdictions, so bulk purchases may require end-use declarations from your supplier. Small perfumery quantities are generally unaffected, but ask your supplier about their process before ordering — regulatory common knowledge worth having.
Update, August 2026: this one is under evaluation. The public consultation on the IFRA 52nd Amendment (12 December 2025 to 12 June 2026) listed heliotropin among the candidates, and a derogation dossier for it is under evaluation as well. Buying it
- The crystals are cheap and keep well; a small pack plus a 10% dilution is the everyday setup.
- Add a bottle of para-anisaldehyde to the order and smell both the flower-by-name and the flower-by-fact.
- The pairing with vanillin is hard to waste. If you own both, start at two parts vanillin to one of this — my own starting point, not a literature formula.
