Material guide: tonka bean — coumarin's hometown, sweet like caramel and hay

CAS 8046-22-8, the absolute of the Dipteryx odorata bean: sweet, warm, coumarinic, nutty, caramellic. The very word coumarin comes from the bean's Tupi name kumarú (lore). 40 suppliers, a dark brown solid, 400 hours of longevity, and a database field that outright recommends evaluation at 10% or less. Two 2022 papers: the first comparison of plant parts across the Dipteryx genus with its Amazon gatherer economy, plus a food study finding roasting beats boiling.

The tonka bean is the seed of the South American tree Dipteryx odorata: black, glossy, wrinkled, and smelling of caramel, almond and hay folded together. Etymology lore says the word coumarin itself comes from the tree's Tupi name kumarú, by way of the French coumarou. The bean came first; the molecule was named after it.

Here, 400 hours is the ceiling of the source's scale (the vanillin guide covered this), measured neat here. The "evaluate at 10% or less" line is unusual in that it sits right in the database field — just follow it. Handling the solid absolute works like oakmoss: soften in a warm water bath, dilute first, and expect tinting.
The bean's hometown and its economy
In 2022, Sousa and colleagues wrote in Molecules from the origin's point of view:
Dipteryx odorata and Dipteryx punctata are species native to the Amazonian, traded by extractivists to obtain coumarin. ⋯ In D. odorata seed extracts and in D. punctata husks, endocarps, and seeds, we identified 1,2-benzopyrone. D. odorata endocarp extracts and D. punctata seeds provided the greatest decrease in mycelial growth of the evaluated phytopathogens, showing promise as an alternative control. ⋯ This research is the first to compare the different parts of species of the genus Dipteryx and to evaluate the use of husks and endocarps of D. punctata fruits to obtain coumarin.
1,2-benzopyrone is another chemical name for coumarin. Two things stand out. First, "traded by extractivists": tonka remains part of the Amazon's gatherer economy — the trees grow in the rainforest, and picking up the beans is income. Second, the study evaluates obtaining coumarin from husks and endocarps as well; our reading is that this is a resource-efficiency question on the raw-material end. The antifungal line keeps the paper's own "promise" hedging: it is an early agricultural-control result, and a separate matter from perfumery.
Food research is not permission to eat it
Tonka has been studied for nutrition and cooking, but national rules for coumarin and tonka in food vary sharply. A food-science paper is not a kitchen permit; the boundary between fragrance and flavour registers is in Half of perfume materials are also declared for food.

Set beside coumarin (74 suppliers): the synthetic molecule has nearly twice the supplier count of the natural absolute, yet 40 suppliers is a strong market vote for a natural solid absolute. Buy the bean side when you want everything besides coumarin — the nutty, caramellic, tobacco-leaning supporting cast.
When you smell it
- To our noses, the diluted absolute opens on almond and caramel, moves through hay, and ends with a bittersweet touch of tobacco and cocoa. It is much thicker than pure coumarin, and that thickness is where the price difference comes from.
- Smelling it beside coumarin is an excellent lesson: the single molecule is clean and direct, the absolute round and complex, and formulas often use both together.
- A crushed whole bean smells different again — greener, more raw-bean. We once left a bean in a sugar jar; a week later the whole jar smelled of tonka.
Regulatory
Listed in GRAS, JECFA, and IFRA. These listings do not provide use limits. Both the skin and food rules revolve around coumarin itself, and the coumarin guide's regulatory section already covers them. Buying notes
- Decide what you want first: for hay sweetness alone, coumarin the single molecule is far cheaper; buy the absolute for the bean's full supporting cast.
- Soften the solid absolute in a warm water bath and make a dilution at 10% or less (the database's own recommendation); expect tinting.
- Whole beans are available from spice merchants and, crushed, make a fine smelling lesson — but check local rules before using them in food.
